 Yak It To Me!   Along with my wife Kate and our neighbors, I co-founded Vermont Yak Company, the first working yak farm in New England (2007), and I am currently the proprietor of the YakItToMe! mobile BBQ food wagon, which serves up locally-grown grass-fed yak burgers, yak sausage sandwiches and Vermont maple sausage yak wraps at farmer’s markets, music festivals and special events. Yak beef has more protein and omega 3s and less fat than any other beef, and, because of their high mountain evolutionary history, yaks consume less grass per acre than any other bovine. This is why yak is the Planet’s greenest red meat, or, as we like to say at our food cart: “Once you go yak, you never go back!”
